CHOCOLATE CHIP PANCAKES

Dry mix extra can be stored in a sealed jar for up to 6 months:
3 cups all-purpose flour
1/2 cup chocolate chips
2 tablespoons and 3/4 teaspoon white sugar
2 tablespoons baking powder
1-1/4 teaspoons salt

Mix the dry mix together.

1-1/3 Cups Dry Mix
3/4 cup milk
1 egg
2 tablespoons vegetable oil

In a medium bowl, combine milk, egg, and vegetable oil. Whisk in 1-1/3 cups
prepared Dry Pancake Mix until moistened but still lumpy. Heat a lightly
oiled griddle or frying pan over medium high heat. Pour or scoop the batter
onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
